Sussex Marquees - Catering

sample image Sussex Marquees strive to produce outstanding quality and value for money. Coming from a country background most of the ingredients are sourced locally through local farmers and market gardens.

All of our food is homemade and seasonal. As every wedding is an individual affair we understand that the menu needs to be carefully worked out with the season and the availability of the ingredients. We work together with the client to produce a well worked out and most of all delicious tasting menu. Be it a Pig roast, BBQ or a sit down five course dinner, we are able to cater for every occasion with flair and passion.

Wedding Menu 1:
Local Sussex Asparagus with reduced balsamic and shaved parmesan Garlic and rosemary studded Rump of Sussex lamb, gratin dauphinoise, seasonal vegetables, thyme and red wine jus
Vanilla panna cotta with summer berries and coconut biscotti

Beetroot and vodka cured gravadlax, picked fennel, wild rocket leaves, honey mustard dressing and toasted rye bread
Roasted fillet of beef with baby beetroot fresh horseradish, fondant potato, and cherry vine tomatoes
Strawberry Crème Brulee with vanilla shortbread

Wedding Menu 3:
Game terrine of rabbit, venison and pigeon with green tomato chutney and toasted sourdough
Fillet of wild salmon, bok choi salad, sweet potato, ginger and soy dressing
Dark Chocolate Nemesis with Crème Fraiche
